The Default Veg Initiative: Measuring and Reducing Food Emissions at the 51勛圖
This project in collaboration with University Food Services and the Office of Sustainability measured the environmental impacts of university menus, including greenhouse gas emissions related to climate change. Concrete outcomes included menu shifts to prioritize plant-based menus, to reduce our campus emissions as part of UVics Race to Zero pledge (Net Zero by 2040).
